A two-star Michelin restaurant in Wales has sparked controversy with its recent hygiene rating. The prestigious Ynyshir, known for its culinary excellence, has left many questioning its standards.
Despite being hailed as one of the world's best restaurants, Ynyshir, located near Machynlleth, received a surprising one-star hygiene rating during a recent inspection. This rating, which indicates the need for major improvements, has raised eyebrows and sparked a debate.
Chef Gareth Ward, a former MasterChef: The Professionals contestant, stands by his restaurant's practices. He asserts that Ynyshir maintains the "highest standards in the world" and attributes the low rating to inspectors' concerns over the use of raw and aged ingredients. Ward explains, "I'm buying sashimi-grade fish from Japan, but the inspectors question the water source. They don't understand that this fish is eaten raw worldwide and that our methods differ from their rules."
But here's where it gets controversial: Ward has a unique approach to aging fish, using a salt chamber, which the inspectors seemed to disapprove of. He defends his methods, stating, "I'm not ashamed, but I am disappointed. We've done something different, and that's what sets us apart."
And this is the part most people miss: Ynyshir takes food safety seriously, employing a specialist compliance company and investing in a high-tech freezer. After the inspection, the restaurant's fish underwent independent testing, which revealed no issues.
Ward acknowledges that the food safety officers had some valid points, and as a result, Ynyshir has installed an additional hand-washing station. He also highlights paperwork issues as a contributing factor to the poor score, emphasizing the need for dedicated office support.
In Wales, food establishments are legally obligated to display their hygiene ratings. Ynyshir has requested a reinspection, but no date has been set yet.
